Ingredients:

1 Cup chopped onion

1 Cup chopped celery

1 Cup diced potatoes

2 Pounds boneless chicken breasts

2 Teaspoons salt

2 Teaspoons poultry seasoning

4 Tablespoons white wine

Enough chicken stock to fill the jars

Directions:

Sterilize the jars in a pressure canner as indicated in the general guidelines of this book. Allow the jars to cool.

Place all ingredients in a saucepan and allow to simmer for 10 minutes over medium high heat.

Put the chicken and vegetables into the jars. Pour over enough broth to cover the chicken. Leave a ½ inch headspace.

Remove the air bubbles and close the lid.

Place the jars in the pressure canner. Place in a pressure canner and process for 25 minutes.
